Slow Cooker Thursday: Pepper Steak
One of my favorite blogs on the Internet, Diary of a Stay at Home Mom, hosts Slow Cooking Thursday each week. Now, I've got a bad memory and tend to forget things, but this week I remembered early enough to get a post in! Woohoo!
Fall is the perfect time to whip out your slow cooker and start using it regularly. Having a piping hot meal ready when you are just coming inside from the crisp air is one of life's little pleasures!

Today I am going to share my recipe for crock pot pepper steak. It is a staple in our household. I've made it in the oven as well, but it just seems to be more tender and flavorful in the crockpot.
Ingredients:
2 lbs of top round (or any cut of beef -- the slow cookers makes them all taste great!) cut into strips
2 large green peppers, cut into strips
1 large onion, sliced
2 garlic cloves, minced
2 packages of brown gravy
2 cups of water
Put the first 4 ingredients into slow cooker. Mix the brown gravy into the water and pour over the top. (I promise it turns into a nice thick gravy)
Cook for 6-8 hours on low. Serve over rice. Also good over egg noodles.
