Menu Plan Monday: Easter Week Edition

Breakfasts this week will consist of:

Apple cinnamon pancakes

cereal w/ skim milk

Ham and cheddar quiche (instead of a pie crust, I am going to use Pam to 'fry' potatoes. I'll line the potatoes in a pie pan and pre-bake in the oven)

French toast sticks w/ light syrup, bananas

Banana muffins and yogurt

Easter Breakfast: Boiled eggs, turkey bacon, toast, and hashbrowns

LUNCHES:

Turkey wraps, pickles, and orange slices
(Use turkey meat, lettuce, olives, tomatoes and roll in a wrap or tortilla)

Soup w/ crackers, fruit platter (strawberries, oranges, bananas, apple slices)

Leftovers on a few days

KIDS' FAVORITE: Lunch on a stick! Take 2 wooden skewers (break off pointed end after you put food on them) On one stick put celery, carrot, radish, grape tomatoes, broccoli -- anything your kids like to eat -- or dip and some chunks of cheese, turkey. On the other skewer, put strawberries, apple slices, banana chunks -- use your imagination. Kids love these.

DINNERS:

Yesterday I made two dinners with leftovers and extra cooked ground beef for a future dinner to save time.

I made 2 shepherd's pies for dh, since he is on a 4-day weekend and this is his favorite meal. I just take ready-made pie crusts, pre-bake them. Cook 1-lb ground beef w/ onion, garlic, and mushrooms. Add a splash of worcestershire sauce and a can of corn (this is what he prefers) You put the mixture into the pie crust, top with provolone or mozzarella cheese (or any cheese you want) and top with mashed potatoes. This probably isn't traditional, but it's the way dh likes them best!

I also made a rigatoni bake. I browned up ground beef and 1/2 lb of hot breakfast sausage together with onion and garlic. I drained it off and heated up 2 cans tomato sauce w/ Italian seasoning and added in the meat. I cooked a pot of rigatoni noodles to al dente. I mixed the noodles with a mixture of ricotta cheese, parmesan, parsley, and garlic salt. It melted from the heat. I took a casserole dish and layered sauce, noodles, more sauce, mozzerella and parm cheese, more noodles, sauce, then more cheese on top. It was rich and delicious.

MONDAY: Well, we are Irish after all! My Mom is making a big pot of boiled dinner! Corned beef, cabbage, potatoes, carrots, and rutabaga! Dark rye bread on the side. Yum!

TUESDAY: I still have leftover pork roast in the freezer, so I am going to make dh some pork stew. I will consider this to be a C.O.R.N.

WEDNESDAY:

THURSDAY: The kids and I eat dinner at my Mom's house this night, so I will make dh sausage and potatoes. (He loves this and it is quick and easy for me)

Friday: This is my sister's birthday! So we will probably go out for dinner!

Saturday: Family Fun Day: I promised the kids a Mexican Fiesta! We will make beef and bean enchiladas, spanish rice, and nachos.

Sunday: Easter Sunday! Hallelujah! My Mom will have us over (poor woman!!!!!!!) Ham, potato salad, deviled eggs, corn, green beans, salad, rolls and more! Yum!

I love, love, love your kids lunch idea. I'm definitely going to try that. I hate thinking of things to make for lunch and this would be a big treat for everyone. I bet you could even make them the night before!

Thanks for stopping by! I keep wanting to try Shepherd's Pie. I think now that I've seen your version, I will try it. I had never heard of C.O.R.N. before...maybe it will be more fun for the kids with such a fun name!

Shepard's Pie is very popular in Maine. My hubby who's from California says it's too bland.
